Le santouri est un instrument à cordes frappées, descendant de l'ancien psaltérion, d'où provient son nom - pisandir chez les Arabes, sandour chez les Syriens.

II est constitué d' une table trapézoïdale, de bois et de grandeurs variés. Ses cordes, tendues parallèlement aux bases, couvrent 3 ou 4 octaves en demi-tons et sont frappées à l'aide de deux minces baguettes aux extrémités recouvertes d'un tampon de coton ou de peau.
